I've been storing all my sauces in the fridge since I didn't have a lot of pantry space. Things like soy sauce, oyster sauce, mirrin, rice wine vinegar, tomato sauce, sweet chilli sauce and lemon and lime juice. Now I have more pantry space, I'd like to move everything out of the fridge to make room but I'm wondering if I should put them back to dry storage after they've already been refrigerated? So I don't know if this is common knowledge, but I thought I'd share. You can pick the new, pale green growth from spruce trees and make delicious syrup from them. Very earthy, citrusy flavor. Good with game or desserts. I am mostly making it for drinks. I will add an image when it's done, but basically you pick about 5 liters of spruce tips. You add water so they are covered and leave oven night. Then you bring it to a boil (like in picture, they turn creepy moss green when cooked) and cook for 2 hours on low. Drain, add 1/2 kg of sugar for every liter of "spruce stock". Simmer for another 2 hours or until desired consistency. (Mix every once in a while or it will burn.) I was on the keto diet for almost 4 years. The first 3 were very positive. Then I developed health problems that persisted for over 10 months. Then I switched from keto to the Mediterranean diet, cut my alcohol way down, and switched from French press coffee to regular. I immediately started feeling better, and continue to progress. For years I struggled to drink water during the day, there were days that I only reluctantly sipped one glass of water, and that was it. I didn't want to take the time to wipe my mushrooms clean last night, so I soaked and swished them in water, even though I knew they'd get waterlogged. While I was cutting them, it occurred to me to use salt to pull out the water, so after grinding the salt with the herbs, that went straight into the bowl with the cut mushrooms. Tossed 'em around to coat, and left them alone for about 15 minutes until there was a puddle of mushroom water in the bottom of the bowl. Then I added the vinegar, some oil, and corrected the seasonings.
