For Father’s Day, I got three gorgeous ribeyes. Each one had a solid fat portion on one end that was about 2.5x2.5x1 inch. Since the streaks already had wonderful marbling and a nice fat ring around them, I decided to trim the extra fat off, dice it, and render it down.
