Hello, I've been on the hunt on FB marketplace for a new butter dish and something called a butter boat caught my eye. It's basically a three piece set. 1 layer you fill with water, the second layer sits on top that is basically a rectangular bowl where you put the butter and then there's a lid. The butter is refrigerated(?) by the water the bowl sits in and I think there's a water seal that prevents bacteria growing much like a butter bell. You can keep it on the counter to stay spreadable soft so long as you change the water 3-4 days. Has anyone had experience with a butter boat? Update! The pot is free! Banging on it, freezing, using a Sharper Image massage gun on it and hot water all failed. We had to take a screwdriver and a hammer to it. The plate broke and is in the trash. Thank you all for your ideas! I'm so glad to have this awesome pot back! It's a family heirloom. This plastic plate is stuck in my pot. I make my Turkey but was wondering if I should use my same temperatures. In a conventional oven I'd start at 400 for 1 hr then drop to 275 for 3-4 hrs. But since convection typically you to cook 25 degrees lower because of the airflow for the same effect. But with my turkey which I cook in a roasting bag; does the fact that the bag prevents air circulation to the turkey should I keep my temperature at the conventional 400/275 or should I lower it for convection cooking at 375/250 degrees. Ingredients: Crispy tofu mince • 400g firm tofu, pressed • 1 tbsp soy sauce • 1 tbsp cornflour • 1 tbsp neutral oil Sticky hoisin sauce • 3 tbsp hoisin • 2 tbsp soy sauce • 1 tbsp rice vinegar • 1 tbsp maple syrup • 1 tsp sesame oil • 1 tsp ginger, grated • 1 garlic clove, minced • 2 tbsp water + 1 tsp cornflour Filling base • 1 small onion, finely diced • 3 chestnut mushrooms, finely chopped • 3–4 spring onions (whites + greens separated) • 1 small red chilli, sliced (optional) To serve • Little gem or butter lettuce leaves • Sesame seeds Method Crumble the tofu and toss with soy sauce and cornflour. Fry in a hot pan with oil until golden and crisp, then set aside. Whisk the sauce ingredients together until smooth. In the same pan, sauté onion and the white parts of the spring onions for a few minutes until soft. Add mushrooms and cook until any moisture cooks off. Pour in the sauce and let it thicken to a glossy glaze. Add the crispy tofu back in and toss for 1–2 minutes so it absorbs the sauce. Stir through most of the spring onion greens. After years of having recipes scattered everywhere I finally have a system that works. Figured I'd share what I'm using daily in case it helps anyone else who's drowning in saved recipes like I was. For meal planning I just use a basic google calendar to map out what I'm cooking when. Nothing fancy but it works. For saving and organizing recipes I looked online and who would have guessed there are apps for it so I started using them, I’m not sure if I’m allowed to mention them in the posts itself without mods banning me but theres a few good ones. They pull from instagram, tiktok, websites, plus I can take photos of cookbook pages or handwritten cards. Everything is searchable in one place which is honestly a lifesaver. Anyone got tips on how to make store and keep chicken skin crackling over 2-3 days without it going soggy? I have an idea for a dish but it requires some planning to see if it's possible for the team to execute. My idea is to make the crackling to order, so it doesn't require storing, but if possible I'd like to pre prepare the crackling for the garnish. It will come with a stew that takes approximately 10 minutes to reheat. Just wandering if it's possible to oven roast the skin so it turns crispy in the time it takes for the stew to heat up in the oven at the same time. The rationale is always set to 220 Celsius at 20% humidity during that time. Its hard to test in practice at home because I don't own a rational type oven. I have a charcoal grill, and if necessary a deep fat fryer with a GF vegetarian and GF non-vegetarian oil at my disposal (oh and of course the rationale). But I'd prefer oven to preserve the flavour.
